1 onion, chopped
1 1/2 c water
1 1/4 c low-sodium beef broth
1 c uncooked rice
1 t curry powder
1/4 t garlic powder
8 oz pineapple chunks, drained
In a medium saucepan, combine onion, water, and beef broth. Bring to a boil, and add rice, curry powder and garlic powder. Cover and reduce heat. Simmer for 25 minutes. Add pineapple and continue to simmer 5 to 7 minutes more until rice is tender and water is absorbed. Transfer to a serving bowl and serve. This recipe yields 4 servings. Serving size: about 1/2 cup.
